Soba is a Japanese type of noodle made from buckwheat and it can be served chilled with a dipping sauce or in hot broth as a noodle soup.
Recreating soba at home is easier then ever with pre-made soba noodles and dipping broth. My favorite is the green tea soba noodles from Hakubaku brand and Shirakiku’s Somen noodle soup base.

Shirakiku Somen noodle soup base (or any other noodle dipping broth).
1. Fill a large pot with water and turn heat to high. Once the water boils, add the soba noodles. Soba noodles cook fast so don’t leave the pot unattended!
2. Cook until the noodles are tender but firm to the bite. Then toss the noodles into a colander and rinse with cold water. Move the noodles to a serving bowl.
3. Pour the soup base into a small bowl. The soup can be served cold or heated.
4. Dip the chilled soba into the broth and enjoy!
