In the old Wyoming days, there was this couple who would join our family for Thanksgiving every year. The wife was an amazing cook and she always brought turkey, giblets gravy, and lemon meringue pie.
Now married and celebrating Thanksgiving in my own home, I wanted to try recreating that gravy for my husband.
The recipes I found online required HOURS (who has time for that?). After a few more clicks, I went with this recipe plus a few shortcuts of my own :).
Giblets (this is usually found inside the frozen turkey)
2 TB butter
1/2 cup finely chopped celery
1/2 cup finely chopped onions
1 TB minced garlic
1 packet of instant turkey gravy (I used Knorr Gravy Mix Roasted Turkey)
1 bay leaf
1 tsp dried thyme
3 TB turkey drippings
1 TB cornstarch
Fresh cracked pepper
1. Heat the butter in a saucepan on medium-high. When the butter is hot and bubbly, add the giblets and brown on all sides.
2. Add onion, celery, garlic. Sauté in the butter until the onions are soft.
3. Add the instant gravy packet and water, as instructed on the packet. Mix well. Let the gravy simmer on medium heat until it starts to bubble. Turn to low heat.
4. Remove the cooked giblets onto a cutting board. Chop up whatever giblets you want for the gravy. I saved the liver and heart and discarded the rest.
5. Mix the chopped giblets into the gravy. Add the bay leaf and thyme.
6. In a separate bowl, mix the turkey drippings and cornstarch. This step is optional, but it will enhance the flavor.
7. Add the drippings mixture to the gravy. Allow the gravy to simmer for a few minutes until you are ready to serve it.
8. Sprinkle with freshly cracked pepper. Enjoy!
